Beautifully crusted on the outside, tender on the inside, this visually and flavours packed striking preparation of cauliflower is popular among chefs. This low-calorie meal is high in nutrients and completely vegan friendly.
1 whole firm and tightly closed cauliflower
3 tbsp maple syrup
1/2 tbsp of garlic powder
1/2 tbsp of smoked paprika
1/2 tbsp thyme
1/2 tbsp oregano
1/2 tbsp ground pepper
1/2 tsp harissa paste
Salt to taste
1 whole lime (zest and juice)
Olive oil to drizzle

Soak the cauliflower in salt/vinegar water for a few minutes and wash with clear water to remove any dirt.
Step 1: Set-up
Remove the leaves of the cauliflower, revealing the stem. Trim the stem of the cauliflower so it is level.

In a bowl, combine maple syrup, harissa pastes, limes zest and dried ingredients.
Preheat the oven at 200°C.
Step 2: Seasoning
Use a basting brush to meticulously spread the mixture all over the cauliflower.
Place the cauliflower onto your Dutch Oven and finalise with a drizzle of olive oil and squeeze of lemon juice.
Step 3: Cooking
Cover the Dutch Oven with its lid, and place on the centre rack of the oven.
Bake for 35 minutes until the cauliflower is tender and pierces easily with a knife. Take off the lid and bake for an additional 10 minutes to create a golden crispy texture.
Step 4: Serving Suggestions
Remove the cauliflower into the serving plate and sprinkle sea salt before serving. This delicious roasted cauliflower can be accompanied with tahini dips.
