Method
Step 1: Set-up
Start by separating the egg yolk from the egg white. In a large bowl, beat the egg white to obtain a firm texture. Set aside in the fridge.
Put small pieces of butter in a microwave-safe bowl and cover it with a paper towel - 10 seconds should suffice to obtain a perfectly melted better.
Step 2: Pancake Mix Preparation
In a large bowl, whisk all dry ingredients together. Add melted butter, warm milk, vanilla extract, egg yolk and slowly combine the mixture. Whisk to obtain a smooth and lump-free mix.
Gently incorporate the egg white into the batter to get a homogenous and fluffy pancake mixture. - For an optimal result use the folding method.
Step 3: Cooking
Heat a large frying pan (non-stick or cast-iron) or griddle over medium heat. Fold a sheet of paper towel in half and moisten with oil; carefully rub the frying pan with an oiled paper towel.
For each pancake, spoon 2 to 3 tablespoons of batter onto the frying pan, using the back of the spoon to spread batter into a round.
Cook 1-2 minutes until the surface of the pancake forms bubbles and a few have burst. Flip carefully with a thin spatula, and cook until browned on the underside, it should take an additional 1-2 minutes.
